A Winter Warmer from Charlotte Hussey

Winter has clasped its icy fingers around us with freezing temperatures. This extreme cold leaves most of us heading for the warm shelters of our homes and not wanting to leave until spring arrives.

The snow and cold weather means that for some keeping up with their fitness regime isn’t possible but locally based Charlotte Hussey (pictured right) from Kick Start Fat Loss has the remedy for warming you up and melting those Winter chills away.

Charlotte told us, ”The cold weather we get during the Winter really disrupts all of our lives, frozen windshields on our cars, icy roads and pavements, and even the fact that it gets dark earlier means that for some people it isn’t possible to get out and work out.

“The cold weather can also affect the way we eat, it can be so tempting just to buy a readymade meal or order a takeaway but those options are full of salt trans-fats and added sugar. There is nothing better than having a home cooked meal in your warm cosy house when the weather is freezing outside”.

Lamb Stew

Ingredients: Diced lamb, Carrots, Onion, Mushrooms, Leeks, Tinned tomatoes, Beef steak tomatoes, Coconut oil, Rosemary, Thyme, Oregano.

Method: Melt the coconut oil in a pan and add the lamb until browned. Once brown remove from the pan and put in your casserole pot. Add chopped onion, chopped leeks and onions. Once these have started to soften add to the casserole dish. Pour in the tinned tomatoes, carrots and herbs. Chop up the beefsteak tomatoes and stir in. Cook in the oven for 4 hours at 120oc, alternatively, put in a slow cooker on low and let it cook all day. If you need it quicker than that, you can cook at 180 for 2 hours although the lamb will not be as tender.
